Cream Base
This is the base you will use to make all your flavors of ice cream.
Ingredients
- 2 large eggs
- 3/4 cup sugar
- 2 cups heavy whipping cream
- 1 cup milk
Directions
- Combine cream and milk in a medium sauce pan over medium heat until it almost boils, then reduce heat.
- Beat eggs until light and fluffy (1-2 minutes), then whisk in sugar slowly, and continue whisking until blended (about 1 minute)
- Add 4 tablespoons of heated cream mixture to the egg mixture and which to temper eggs.
- Gradually add egg mixture to warm cream mixture, stirring constantly to prevent eggs from curdling.
- Cook over low heat until thickened and coats the back of a spoon (3-4 minutes).
- Cool overnight (or in an ice bath).
- Put mixture in ice cream maker and follow instructions.
Vanilla Bean
Add 2 inch vanilla bean (split lengthwise) into sauce pan with cream. When cool, scrape seeds from vanilla bean and throw away the bean shell.
Vanilla
Before cooling add 2 teaspoons vanilla extract.
Mint
Before cooling add 2 teaspoons peppermint extract.
Coffee
Before putting in ice cream maker, mix in 2 tablespoons instant coffee. After the ice cream stiffens in the ice cream maker (about 2 minutes before it is done) add 1 tablespoon instant coffee.
Peanut Butter
Add 1/3 cup creamy peanut butter to cream mixture.
Nutella
Add 1/2 cups Nutella to cream mixture.
Oreo (not cookies and cream)
Ingredients
- 12 Oreo cookies
Directions
- Split the Oreo cookies and remove the cream.
- Blend the cookies in a food processor until they are fine crumbs.
- After cooking the cream and egg mixture, but before cooling, mix cookie crumbs into the mixture.
