Cream Base

This is the base you will use to make all your flavors of ice cream.

Ingredients

  1. Combine cream and milk in a medium sauce pan over medium heat until it almost boils, then reduce heat.
  2. Beat eggs until light and fluffy (1-2 minutes), then whisk in sugar slowly, and continue whisking until blended (about 1 minute)
  3. Add 4 tablespoons of heated cream mixture to the egg mixture and which to temper eggs.
  4. Gradually add egg mixture to warm cream mixture, stirring constantly to prevent eggs from curdling.
  5. Cook over low heat until thickened and coats the back of a spoon (3-4 minutes).
  6. Cool overnight (or in an ice bath).
  7. Put mixture in ice cream maker and follow instructions.

Vanilla Bean

Add 2 inch vanilla bean (split lengthwise) into sauce pan with cream. When cool, scrape seeds from vanilla bean and throw away the bean shell.

Vanilla

Before cooling add 2 teaspoons vanilla extract.

Mint

Before cooling add 2 teaspoons peppermint extract.

Coffee

Before putting in ice cream maker, mix in 2 tablespoons instant coffee. After the ice cream stiffens in the ice cream maker (about 2 minutes before it is done) add 1 tablespoon instant coffee.

Peanut Butter

Add 1/3 cup creamy peanut butter to cream mixture.

Nutella

Add 1/2 cups Nutella to cream mixture.

Oreo (not cookies and cream)

Ingredients

Directions

  1. Split the Oreo cookies and remove the cream.
  2. Blend the cookies in a food processor until they are fine crumbs.
  3. After cooking the cream and egg mixture, but before cooling, mix cookie crumbs into the mixture.
